The Best New England Clam Chowder Recipes

The Best New England Clam Chowder Recipes Clam Chowder Recipe Made with Bacon I got hooked on this clam chowder recipe when Diane from Gresham and Myers brought over two big pots of it to try. We loved it; none of it went to waste. So, when I asked the crew what they would like to have for a company luncheon this last week, this was an easy choice—especially when I suggested focaccia and peach sundaes to go with it. The lunch was a blast. We had a ton of chowder plus chili for the gluten-free folks. Most of the …

Love Salads? How to Cut Your Calories by 75%

The fat is the culprit.  That’s where all the calories are.  Most low fat recipes simply dilute the fat with water.  That’s unacceptable.  The fat in an oil-and-vinegar type dressing does three things: It creates a pleasant “mouth feel” to the dressing It provides a “stickiness” to coat the greens It dilutes the vinegar so that the dressing is more palatable. But oils carry nearly 2000 calories per cup–way too much. In Search of a Substitute So what’s the answer?  You need a substitute. Water just makes your salad soggy without adding “mouth feel.” Fruit juice makes it soggy, the …

How to Make a Brownie Pizza

These are really simple to make.  It’s simply a brownie baked in a pizza pan and then frosted and decorated with drizzles. Bake the pizza.  We used Uncle Bob’s Extra Moist and Chewy Brownie Mix.  It makes a 9 x 9-inch pan of brownies.  With these, we made 14–inch round pizzas.  Because the batter is spread thinner than in a nine-inch pan, they baked in only 15 minutes. You can also use this mix and bake a 12-inch pizza or two 9-inch pizzas using two 9-inch cake pans.  The batter is little deeper and it takes another couple minutes to …

How to Make Cupcake Milkshakes

How to Make Cupcake Milkshakes I watched a video hosted by a national bakery supplier about making cupcake milkshakes.  Interesting. I love ice cream with my cake. I brought it to the staff’s attention as a potential project. They told me that I had been living under a rock; that there were restaurants in both Rexburg to the north and in Idaho Falls to the south that served cupcake milkshakes. So we bought a bunch of ice cream—we always have cupcakes—and got started. They were easy to make. You make the milkshake and then throw a whole cupcake in the …

Three Problems with Your Baking and How to Fix Them

Three Problems with Your Baking and How to Fix Them We answer hundreds of questions. That’s what happens when you teach classes, have a store, and answer emails. Over and over, we see questions that are related to the following three issues. Problem #1: Your Temperatures is Wrong We had a demo at a local furniture store. We asked them to test their oven temperatures before we began. They were 35 degrees off. That’s common. And that temperature indicator on your control panel?—don’t believe it. Chances are, it’s run on a timer and not a thermometer. And your oven temperature is not always constant at …

In Search of the Perfect Strawberry Pie

In Search of the Perfect Strawberry Pie There is a country diner not far from where I live that serves a great strawberry pie. It’s a simple affair; chunks of fresh berries, a bit of thick slurry, and tons of whipped cream in a flakey crust. No wonder it’s good. But it’s not picturesque. When sliced, the berries come tumbling out. There’s no such thing as crisp, clean cuts as you would picture with a pumpkin pie. However, neither does a pie have to be runny and sloppy. Realizing that, we set off to find the best strawberry pie–not one with perfectly cut slices. The problem …
